This Superbowl weekend you have to have the chips and plenty of dip in order to get the party started, and some pizza holla! Well, here are some recipes to this party classic and a way to keep it fresh and frugal is to get the ingredients from your pantry and the local grocery store. The Cleveland leader has given the run down on these tasty treats. ENJOY! HIKE! HIKE!
7 Layer Mexican Dip
Ingredients:
* 3 cups shredded iceberg lettuce
* 1 16 oz. can vegetarian refried beans
* 1-1/2 cups prepared salsa
* 1 cup prepared guacamole
* 8 oz. low-fat or fat-free sour cream
* 1 Tbsp. mild chili powder
* 1-2 cups shredded cheddar cheese
* sliced black olives for garnish
Preparation:
1. Spread lettuce in an even layer in a deep-dish pie plate, gratin dish or serving bowl.
2. Spread refried beans over lettuce. (Hint: To make the beans easier to spread, transfer them to a microwave-safe container, and heat on high for 20 seconds.)
3. Top with salsa, then guacamole.
4. Stir together sour cream and chili powder. Spread over the guacamole layer.
5. Sprinkle cheddar cheese over the sour cream layer. Dot with sliced black olives.
Serve with tortilla chips.
Chili Dog Chili:
Ingredients:
* 3 to 4 tablespoons vegetable oil
* 2 lbs ground beef (or use half ground pork)
* 2 medium garlic cloves, finely minced
* 1/4 cup tomato paste
* 1 onion, finely chopped
* 2 cups beef broth
* 5 Tbsp. chili powder
* 6 Tbsp. corn meal or masa harina
* 2 tsp. sugar
* 2 tsp. salt
* 1 tsp. ground cumin
* 1 bay leaves
Preparation:
Heat oil and saute garlic and onion until light golden, about 7 to 9 minutes. Add chili powder, sugar and cumin. Continue cooking, stirring constantly, for 2 minutes. Add ground beef and cook, stirring, until evenly browned. Stir in remaining ingredients; reduce heat to low and simmer until very thick, 15 to 20 minutes. Discard bay leaf. Makes about 20 servings of hot dog chili on chili dogs.
Spicy Crock Pot Barbeque Chicken Wings
Ingredients:
* 3 pounds chicken wings (16 wings)
* salt and pepper to taste
* 1 1/2 cups any variety barbecue sauce
* 1/4 cup honey
* 2 teaspoons prepared mustard or spicy mustard
* 2 teaspoons Worcestershire sauce
* Tabasco to taste, optional
Preparation:
Rinse chicken wings; pat dry. Cut off and discard wing tips then cut each wing at the joint to make two sections. Sprinkle wing pieces with salt and pepper; place wings on an lightly oiled broiler pan. Broil about 4 inches from the heat for 10 minutes on each side, or until chicken wings are nicely browned. Transfer chicken wings to crockpot.
In a bowl, combine barbecue sauce, honey, spicy mustard, Worcestershire sauce, and Tabasco. Pour sauce over chicken wings. Cover and cook on LOW for 4 to 5 hours or on High 2 to 2 1/2 hours. Serve directly from slow cooker, keeping temperature on LOW. Makes about 30 chicken wings.
Italian Sausage Sandwiches
Ingredients
8 Italian sausages (hot or mild)
4 or 5 green peppers, seeded and cut into strips
2 sweet onions, cut into strips
2 tablespoons olive oil
salt and pepper to taste
Directions
Preheat oven to 350 degrees.
In a Dutch oven or cast iron fry pan add olive oil to coat bottom of the pan. Add green peppers, onions, and season with salt and pepper. Place Italian sausage on top of peppers and onions. Cover lightly with foil and bake for 45 minutes. Remove foil and bake another 7 to 8 minutes. Turn the sausages and bake another 7 to 8 minutes.
Remove from oven and serve on soft sausage rolls. You may also like to try sprinkling a little mozzarella cheese on top.
Football Cookies
Sugar Cookies
1 c. Shortening
4 eggs
1 T. vanilla or lemon or almond extract
7 cups flour
1 T. salt
3 c. sugar
1 c. buttermilk
1 tsp. baking soda
5 1/2 tsp. baking powder
--Mix ingredients together and chill for several hours. Roll out, and cut with football, helmet, or jersey shaped cookie cutters. Bake at 350 for 8-10 min. Frost cookies with the following recipe.
1 (8 oz) cream cheese
2 T. butter
2 tsp. vanilla or lemon or almond extract
4 c. powdered sugar
- Add appropriate colored food coloring to frosting mix (yellow/black for Steelers and red/white for Cardinals), and frost cookies. Allow to cool and set.
Football & Helmet Shaped Jello Jigglers -
For Steelers' fans - grab a few boxes of Lemon or Pineapple flavored Jello.
For Cardinals' fans - grab a few boxes of Watermelon, Strawberry, Mixed Fruit, Cherry, Cranberry, Raspberry, or Black Cherry flavored Jello.
Follow the directions on the box to make Jello jigglers. Pour mixture into football or helmet shaped molds.
